Healthy Buffalo Chicken Pasta

One of my favorite dishes to bring to a cook out or to prep for a weekend football game is a delicious Buffalo chicken pasta. I had this pasta dish a few years ago and just fell in love it with. This recipe is easy, quick, versatile and has a bit of a kick without being too spicy. If you like spicy you can always kick it up by adding more hot sauce or getting a hotter hot sauce. This pasta dish has plenty of protein with the chicken, and lots of fresh vegetables, which I find to give a good balance to spicy chicken.

For this version I’ve taken it up a healthy step by mixing it with a Greek yogurt ranch dip, typically I would make this with just a regular ranch dressing; you can always go ahead and substitute the Greek yogurt ranch with the regular ranch dressing, or if your a fan, blue cheese dressing is a good alternative as well. I’m not a blue cheese fan so I always mix in a ranch substitute.

Make it even healthier

Also another healthy tip for this recipe would be to grab a healthier pasta, such as a Barilla pasta that contains protein, pasta made of wheat or even a vegetable pasta (sneak in the extra vegetables for the picky eaters!) these would all be good healthy substitutions for the dish

Chicken Pasta

 1 lb pasta, cooked per box directions, and cooled
 1 cup diced bell peppers, orange, red or yellow
 1 cup diced, zucchini
 ½ cup Franks red hot
 16 oz cooked diced chicken
 1 ½ cups plain greek yogurt
 1 hidden valley greek ranch season packet

Cook the pasta according to package instructions, drain and let the pasta cool in the refrigerator while you prep the rest.

Pour the Frank's red hot sauce over the chicken, give that a good mix and let it sit to marinate while you dice the veges.

Dice up all of your vegetables in to nice bite size pieces.

Mix the ranch seasoning packet into the Greek yogurt and give that good stir till it evenly mixed in.

Dump, chicken, vegetables and ranch mixture over the pasta and mix until all ingredients are well covered.
